Goulash Extravaganza is a community-based culinary art program centered around one of Hungary’s most iconic dishes: the goulash. The project brings people together through the act of cooking, creating space for connection, dialogue, and the sharing of cultural values. Focusing on home-style dishes and traditional foodstuffs – like goulash with paprika, a meal typically served at weekend family lunches – the program taps into the emotional and sensory memories we often carry with such meals. Through cooking and sharing, Goulash Extravaganza turns food into a cultural bridge, offering a cosy situation where storytelling, tradition, and collective memory come together.

Martin “Panda” Mucsi is a passionate chef and barista who blends the authentic charm of Kalvino – the family bistro he runs in Hungary’s Southern Great Plain region – with the vibrant energy of Grund, where he serves as head chef and leads a kitchen capable of catering to nearly 1,500 guests. His repertoire showcases the pure flavors and ingredients of Eastern European peasant cuisine, which he skillfully deconstructs while staying attuned to global culinary trends. With his refined palate, he can detect even the most subtle flavors and textures with almost uncanny precision. He really enjoys experimenting with small portions, finger food, and beer snacks – an area in which he has gained national recognition. His culinary art is a combination of tradition and modern street food.
